I always make mine open-faced and then fold. Some like to top with another tortilla but I prefer the fold. Layer with mixed shredded cheese, tomatoes and jalapenos. You can use oil or butter or a non-stick pan with neither (pictured here).
When the cheese is fully melted, fold and flip to get desired "crunch". I like mine crispy. Others could remove sooner for a softer quesadilla.
Cut into wedges and serve with your dip of choice, salsa, sour cream, guacamole or Ranch. Enjoy!
