Mome reads Mommy, My daughter's way to spell it when she was younger... It stuck. My son calls me Mome... just like it looks. I now sign all my notes to them "Love, Mome". It's our inside secret and makes them smile. I always want them to smile.

Bacon Pancake Dippers

Here's another idea I got from Pinterest.  I really must get beyond the photos because, I'm sure there were directions on how to do this easier.



I started by cooking the bacon in the oven.  This really is the easiest way to get it crisp and flat.  Flat is good when trying to cover in pancake batter.

Put bacon on a foil lined cookie sheet, put in oven and THEN turn the oven to 350 and bake for 15-20 minutes.  Cold oven makes all the difference in the world.

Finish cooking and move to paper towel lined plate to drain off extra grease.

Mix up pancake batter of your choice.  

Through trial and error, I realized that the BEST way to get thin dippers is to use a plastic bottle or baggie with small tip cut off.

Squeeze a small line of batter into hot skillet, put bacon on top of it and then cover top of bacon with more batter.  Continue cooking like you would regular pancakes.

Serve with warmed syrup and sides of your choice.

The kids LOVED these for DINNER!
