There are many varieties and endless possibilities when it comes to salad. This I whipped up with some leftover grilled chicken and other ingredients on hand.
Spinach, tomato, egg, red onion, grilled chicken and I sliced up a mozzarella cheese stick. Sprinkled with pepper and drizzled on a Greek Vinaigrette. Yum!
